Identity
From experience to data
For years, the development of new or modified recipes relied on experience, on repeated trial production runs and on the gradual adjustment of the quantities and of the production conditions. The process required a significant number of trials and did not ensure that the conclusions drawn from one recipe could be applied reliably to different product categories.
The necessity of the SMART BAKE AI project was linked precisely to the need to move from empirical and repetitive procedures to a systematic, data-centric and scientifically documented methodology.

Research infrastructure
Dedicated premises for the experimental production
Throughout 2025 the business maintained professional premises that were used exclusively for the preparation of the raw materials, the production and monitoring of the experimental test specimens, the recording of the results and the safekeeping of the research material. The remaining staff work at two other premises leased by the business under separate lease agreements.
The equipment of these premises supported the preparation, weighing and dosing of the raw materials, and the production and handling of the test specimens, so that the trials were carried out under repeatable and, as far as possible, controlled conditions of temperature and humidity.

Design and execution of the experimental trials, monitoring of the composition and production parameters, collection and organisation of the data, assessment of the quality characteristics of the test specimens.

Scientific lead: Panagiotis Karakitsios, civil engineer of the National Technical University of Athens specialising in computational mechanics and artificial intelligence.
